simple chicken quesadillas

quesadillas make for a quick and easy meal. while these are in no way authentic, they are quite tasty and satisfying. this is more of a suggestion than an actual recipe, so use what you have on hand and enjoy!

serve these as appetizers or as a meal.









serves 4

equipment
skillet or pan large enough to fit the tortilla

ingredients
8 medium-size flour tortillas
2 cups cooked chicken, chopped or shredded
2 cups shredded cheese (such as queso or mexican blend)
1 can black beans, drained and rinsed
1 tablespoon chili powder
handful of cilantro leaves (optional)
salsa

instructions
  1. in a large bowl, mix together the chicken, cheese, and black beans. add the chili powder and cilantro and mix to combine. set aside the filling mixture.
  2. heat the pan over medium heat.
  3. once the pan is hot, place a tortilla flat in the pan and spoon 1/2 cup of the filling mixture evenly over the tortilla until within an inch of the edge.
  4. place a second tortilla on top of the filling layer.
  5. after about 2 minutes, carefully flip the quesadilla over with a spatula.
  6. continue to heat until the cheese is melted and the quesadilla is heated completely through (about a minute).
  7. serve with salsa for dipping.
notes:
  • the quesadillas pictured above do not have black beans- i was all out of them :(
