serve these as appetizers or as a meal.

equipment
skillet or pan large enough to fit the tortilla
ingredients
8 medium-size flour tortillas
2 cups cooked chicken, chopped or shredded
2 cups shredded cheese (such as queso or mexican blend)
1 can black beans, drained and rinsed
1 tablespoon chili powder
handful of cilantro leaves (optional)
salsa
instructions
- in a large bowl, mix together the chicken, cheese, and black beans. add the chili powder and cilantro and mix to combine. set aside the filling mixture.
 - heat the pan over medium heat.
 - once the pan is hot, place a tortilla flat in the pan and spoon 1/2 cup of the filling mixture evenly over the tortilla until within an inch of the edge.
 - place a second tortilla on top of the filling layer.
 - after about 2 minutes, carefully flip the quesadilla over with a spatula.
 - continue to heat until the cheese is melted and the quesadilla is heated completely through (about a minute).
 - serve with salsa for dipping.
 
- the quesadillas pictured above do not have black beans- i was all out of them :(
