as a general rule, the geek hates salad. hates it! that being said, there's one salad that he likes (almost loves). he calls it "the best salad ever!" it's based on an apple-bacon-cheddar sandwich served at one of our local restaurants. the sweet, crunchy apple, salty-savory bacon, and sharp cheese all work well together in taste and in texture.
this is not so much a recipe as it is a recommendation.
ingredients:
2 hearts of romaine chopped (or a 5oz container of mixed greens)
6 slices of bacon, prepared according to directions and chopped when cooled
5 oz sharp cheddar, grated
1 crisp apple, cored and diced (such as gala, fuji or honeycrisp)
half a small red onion, thinly sliced
poppy seed dressing (we use brianna's; a honey mustard dressing would also work well).
assembly:
plate lettuce and top with remaining ingredients or toss everything together in a bowl.
serve with dressing on the side.
serves 4 as a starter or 2 as a main course. for a heartier meal, you could also add some left-over roasted or fried chicken. for a healthier version (as pictured here), use turkey bacon.
